Pita Pocket

Ingredients

    2 tablespoons hummus (homemade or store-bought)
  • 1 whole-wheat pita bread (small size or half of a regular-size pita) ¼ cup Romaine lettuce or mixed greens ( shredded)
  • 1 small fresh tomato (chopped up)
  • ¼ cup sliced fresh cucumber

Utensils

  • Knife
  • Cutting board

Pita Pockets can be a healthy but delicious light lunch! You can use vegetables that you’d like for your teen, or you can even throw in some leftover meat from last night’s dinner. These Pita Pockets can be served with a side salad or even a bowl of soup for a heartier meal.

Step by Step Instructions

Use a knife to open up the pita pocket.

Spread the hummus on the inside of the pita.

Add the cut up tomato and cucumber then add the shredded lettuce.

Serve as soon as possible or else the pita pocket will soften.

Notes

Pita Pockets are great for your teen’s lunch. If your teen is taking this for a packed lunch, be sure to keep the ingredients separate. Your teen can put everything into the pita just before he or she eats it.
