Pepper and Tomato Frittata

This Pepper and Tomato Frittata is not only quick and easy to make but it is also delicious! It takes 5 minutes of preparation time and less than 10 minutes to cook, so it is a perfect breakfast or lunch for those teens in a time crunch. The ingredients needed are ones often found in the fridge so the recipe doesn’t need to be planned in advance.
Step by Step Instructions
Chop the tomato and pepper into small pieces. Use a whisk to beat the egg whites until frothy.
Set the oven to the broil setting. Generously spray an oven-safe skillet with cooking spray.
Place the skillet on medium heat then add in the chopped peppers. Cook for 3 minutes until they begin to soften.
Pour the egg whites over the peppers then cook for a minute. Gently move the eggs around just until the bottom starts to set. Sprinkle the chopped tomatoes over the egg mixture.
Put the skillet under the broiler and broil for about 3 minutes until the top of frittata is lightly brown and just cooked through.
Use an oven mitt to remove the pan from oven and allow frittata to cool for about 5 minutes.
Slice and remove from pan. Serve.
Notes
For an extra healthy meal, serve the frittata with a side garden or green salad. If you are planning on making this on a morning where there is less time, just chop the veggies up ahead of time.
