Chive & Cheese Omelette

Ingredients

  • 2 eggs
  • 1 teaspoon olive oil
  • 2 tablespoons goat cheese
  • ½ teaspoon chives (minced)
  • Salt and pepper (to taste)

Step by Step Instructions

Whisk two eggs in a bowl. Season with pepper and salt to taste.

Add the goat cheese and chives.

Heat a small saucepan with olive oil.

Cook the egg mixture over medium to high heat until the omelette sets.

Notes

Serve the omelette with an orange or grapefruit for some added vitamins. Or serve some toast topped with fruit preserves on the side.
