Quinoa Roll-ups

Ingredients

  • 2 cups quinoa
  • 1 can diced tomato
  • 1/2 yellow onion
  • 1 can of chickpeas
  • 2 red, orange or yellow peppers

  • Spatula

Quinoa Roll-Ups incorporate healthy ingredients into a delicious meal! Your school-aged child will have fun helping to prepare these rolls as well as eating them! Let your taste buds blast off when you take your first bite! 

Step by Step Instructions

In a medium to large saucepan, sauté the diced onions in the olive oil.

Drain the chickpeas and add them to the onions.

Add in one or two diced peppers.

Add pepper, cumin and salt to taste then sauté all the ingredients for between 5 to 8 minutes.

Add the can of diced tomatoes to the saucepan and bring to a simmer.

Add the quinoa and mix all of the ingredients together.

Toast a large flour tortilla then spread cheese and quinoa mixture into the middle. Roll up the tortilla.

Notes

For some variation, try adding in other ingredients that you have on hand, such as black beans, rice, corn and chopped meat. Or dip the Quinoa Roll-Up into some salsa for a punch of flavor!
