Fruit Pizza

Ingredients

  • 1 package (about 16.5 ounces) sugar cookies, sliced
  • 1 8-ounce package cream cheese (softened)
  • 1/4 cup sugar
  • 1/2 teaspoon vanilla
  • 4 cups assorted fresh fruit (such as strawberry and kiwi slices, raspberries, mandarin oranges)
  • 1/4 cup apple preserves (press through strainer to remove lumps)
  • 1 tablespoon water

Utensils

  • 12 inch pizza pan
  • Tinfoil
  • Cooking spray
  • Plate
  • Mixer
  • Pastry brush

This Fruit Pizza recipe makes a delicious healthy pizza filled with your child’s favorite fruit! Although, you may even be able to sneak in some fruit that your child may not love without him or her ever knowing.

Step by Step Instructions

Pre-heat the oven to 375 degrees F.

Line the pizza pan with tinfoil and spray with a cooking spray.

Arrange the cookie dough slices on the prepared pan in one layer. Press them together so that the bottom of the pan is completely covered.

Bake for 15 minutes, then cool completely.

Turn over onto the plate and carefully remove the tinfoil. Turn the crust back over and place on the plate.

Beat the cream cheese, vanilla and sugar with a mixer until it is blended. Spread mixture onto the crust.

Top the crust with fruit.

Mix the water and preserves then brush onto the fruit.

Refrigerate for 2 hours.

Notes

This Fruit Pizza is great for using up that leftover fruit in the fridge before it goes bad. Also, to make this even more filling, try dipping each piece of the pizza in some plain, natural yogurt.
