Turkey Sloppy Joes

Ingredients

  • 1 tablespoon of olive oil
  • 4 carrots (coarsely grated) (about 2 cups)
  • 1 medium onion (minced)
  • 1 clove of garlic (minced)
  • Ground pepper and coarse salt
  • 3 tablespoons of tomato paste
  • 3/4 pound of ground turkey (lean, dark meat)
  • 1 can (28 oz) of crushed tomatoes
  • 2 tablespoons of dark-brown sugar
  • 1 tablespoon of cider vinegar
  • 1 teaspoon of Worcestershire sauce
  • 4 wholewheat hamburger rolls (split)

This recipe for Turkey Sloppy Joes is a tasty and nourishing rendition of the meat and tomatoes favorite. By using ground turkey instead of ground beef, there is still plenty of flavor without all of the saturated fat. This is a great recipe for the whole family and it quick and easy to make!

Step by Step Instructions

Heat oil over medium heat in a large saucepan.

Add in the carrots, garlic and onions. Season with pepper and salt.

Cook for about 5 minutes, while stirring occasionally.

Add in the tomato paste and cook for about a minute. Stir.

Add in turkey and break up meat with a spoon. Cook for about 4 to 5 minutes (until meat is no longer pink).

Add in the tomatoes, vinegar, Worcestershire sauce and sugar. Cook until thickened (about 12 to 14 minutes) and stir occasionally.

Serve on wholewheat rolls.

Notes

This is a sure-fire hit with any kids in the family! You can substitute some of the ingredients for other ingredients to change it up a bit. Add in some peas, beans or even corn to the recipe. Or just have some veggies on the side.
