Pizzadillas

Pizzadillas are a terrific cross between a quesadilla and a pizza. These can be made fairly quickly so they are perfect for a snack or lunch. They are also pretty easy to eat on the run. They are quite healthy as they are low in fat. And by adding the fresh marinara sauce, you can boost the vitamin C content.
Step by Step Instructions
Lay two tortillas out on a flat surface. Divide the cheese and spinach between the tortillas.
Top the prepared tortillas with the remaining two tortillas.
Heat the skillet over medium heat and then lightly coat the skillet with some cooking spray.
Gently put one of the pizzadilla into the skillet and cook until it is a light golden brown color on one side (1 to 2 minutes).
Using the spatula, flip over the pizzadilla, then cook for about a minute longer until the cheese is melted.
Remove the pizzadilla from the skillet and then cut it into triangles.
Follow above instructions with the remaining pizzadilla ingredients.
Serve the pizzadillas with the marinara sauce for dipping.
Notes
These Pizzadillas can be wrapped up and refrigerated for leftovers. They are great when warm from the skillet or they can be packed cold for a great tasting lunch. Just pack a little container for marinara sauce on the side to dip.
