Pizza Pockets

Ingredients

  • 1 tablespoon of olive oil (plus more for brushing)
  • 1/2 small onion (diced)
  • 1 clove of garlic (minced)
  • 1 tablespoon of tomato paste
  • One can (28 oz) of diced tomatoes
  • 1/2 teaspoon of sugar
  • Freshly cracked black pepper and salt
  • 4 - 6 leaves fresh basil (torn)
  • All-purpose flour (for dusting)
  • 1 pound of pizza dough (divided into 4 balls)
  • 2 cups of shredded mozzarella cheese
  • 12 oz pepperoni (thinly sliced)
  • Grated Parmesan (to taste)

Pizza is often considered a staple food for pre-teens and teens. When you want to change things up a bit, serve them a homemade Pizza Pocket! This is a recipe that will win them over! These Pizza Pockets can be made from fresh and homemade dough or store-bought dough (or even canned biscuits) to save some time. You can add in some of your pre-teen’s favorite veggies to make it even healthier.

Step by Step Instructions

Pre-heat oven to 400 degrees F.

Heat the oil in a small saucepan over medium-low heat. Add in the onions and saute until they are translucent (about 2 to 3 minutes).

Add in garlic and saute for a minute.

Add in tomato paste and saute for another minute.

Stir in the tomatoes and sugar, then season with pepper and salt.

Add in the torn basil leaves and bring the pot to a slow simmer. Allow it to simmer for about 15 minutes while you prepare your pizza pocket.

Roll out the dough on a lightly floured surface into four equal rounds.

On one half of each round, layer some mozzarella cheese, and then add pepperoni slices.

Fold it in half so that the filling is covered, then fold the outer edges up. Crimp the edges with your fingers to seal.

Put the pizza pockets on the baking sheet, then brush with olive oil and sprinkle with Parmesan.

Bake until golden brown, about 10 to 15 minutes.

Serve the pizza pockets with some sauce on the side.

Notes

For variety, choose some additional ingredients to add! You can add in some chicken that has been tossed with some barbecue sauce, add in some favorite vegetables. And for an extra punch of flavor, dip the pizza pocket in some fresh marinara sauce.
