Muesli Bars

Ingredients

  • ½ cup honey
  • ¼ cup caster sugar
  • 1/2 cup butter
  • 3 cups rolled oats
  • 1 cup Rice Bubbles
  • 1 cup sultanas
  • ½ cup chopped apricots (or dates, chocolate chips)
  • ½ cup shredded coconut
  • ¼ cup pumpkin, sunflower or sesame seeds

Utensils

  • Slice tray
  • Parchment paper
  • Saucepan
  • Large spoon

Muesli bars are can be expensive and at times, not so healthy. This Muesli bar recipe makes healthy and homemade bars with fresh and real ingredients. By choosing to make Muesli bars, you can significantly cut down on the amount of sugar and fat, but still make them tasty so your kids will not notice the difference.

Step by Step Instructions

Pre-heat the oven to 180 degrees C.

Grease the  tray.

Line it accurately using parchment paper.

Combine the honey, butter and sugar in a saucepan.

Be sure that you have your temperature set to medium heat.

Stir the ingredients, mixing well.

Cook for 2-3 minutes until the butter has melted and the sugar has dissolved.

Bring to a boil and cook for two minutes (or until the syrup thickens slightly).

Remove the saucepan from heat.

Combine the remaining ingredients in a large mixing bowl.

Pour over the hot syrup and then stir to combine all the ingredients.

Put into pan.

Bake in the oven for 15-20 minutes.

Once it has cooled, you may put it in the fridge.

Keep the item in the fridge until the item is cold.

You can then divide it up into portions and serve.

Notes

To get a smooth finish on top of the bars wet your fingers with cold water and press down on the top. If you’d like to make gluten-free bars, use 2 cups of rice bubbles and 2 cups of crushed cornflakes. For variety, use different types of dried fruit based on your child’s preferences).
