These Meatloaf Sliders are perfect for those not-yet-teens but the recipe will make enough for the entire family to enjoy! And as these sliders do not require the use of a grill, they can be made any time of the year and in rain or shine.
Step by Step Instructions
Pre-heat the oven to 350 degrees F. Line a baking sheet with parchment paper. Place a cooling rack on top. Spray the rack very lightly with cooking spray.
Combine the egg, 1/4 cup of ketchup, beef, breadcrumbs, onion, Worcestershire sauce, thyme, parsley, and 1/2 teaspoon each pepper and salt, as well as the garlic powder in a large mixing bowl.
Using your hands, mix everything together.
Using a tablespoon, shape tablespoonfuls of the meat mixture into small and thin patties (about 2 inches in diameter).
Place the patties on the prepared rack on top of the baking sheet.
Brush each of the patties with the remaining 1/4 cup ketchup, then bake about 20 minutes.
Spread mayonnaise on one side of each of the buns. Serve each meatloaf slider on a prepared bun.
Notes
Bake some thick homemade potato fries alongside these Meatloaf Sliders in the oven. Prepare some pickles on the plate too, and maybe even throw some coleslaw beside them!
