Homemade Poptarts

Ingredients

  • 1½ cups of strawberries (chopped)
  • ½ cup of sugar
  • 1-2 tablespoons of honey
  • A splash of milk
  • Pie dough (store bought or homemade)
  • 1 egg white
  • 1¼ cups of sifted powdered sugar
  • 1 teaspoon of vanilla extract

  • Baking sheet
  • Parchment paper
  • Medium-sized saucepan
  • Large spoon
  • Pastry brush
  • Knife
  • Wire cooling rack

Poptarts are delicious but the store-bought ones are usually far from healthy. These Homemade Poptarts are just as delicious but use fresh and healthy ingredients. Plus they are easy to make! They are great for a fast, tasty and easy breakfast to eat on the run.  If you would prefer to leave off the frosting to reduce the amount of sugar, they are still really tasty.

Step by Step Instructions

Pre-heat oven to 350 degrees F. Line the baking sheet with parchment paper, then set aside.

Combine sugar, honey and strawberries along with a splash of water into the saucepan.

While stirring and mashing the filling, heat over medium heat about 20-20 minutes (until the filling has thickened). Allow the filling to cool.

Roll out the pie dough on a surface that has been lightly floured until the desired thickness has been achieved.

Cut out 3″ by 4″ rectangles to make the poptarts. Roll out excess dough and then re-cut if needed. Each poptart requires two rectangles. Place a row of rectangles on a baking sheet.

Carefully spoon about one tablespoon of strawberry filling onto each rectangle in the center of the pie dough. Spread the filling slightly.

Using your finger or a pastry brush, brush a bit of milk onto the edges of the dough. Carefully lay the 2nd rectangle over the top of the filling and using your fingers, press down along the edge to close each poptart.

Use the back of a fork to press along the edges of the dough to ensure the poptart is completely sealed. Cut two or three small slits in the top of the poptarts.

Bake the poptarts until they are golden brown (about 25 to 30 minutes).

Place the poptarts on a wire rack to cool completely.

To make the icing, beat the egg white on medium to high speed until it is light and frothy. Add the powdered sugar slowly while mixing. Add in the vanilla and then continue mixing until it is fully blended.

Frost your poptart and then add sprinkles if you choose.

Notes

Store bought pie can taste just as good as homemade in this Homemade Poptart recipe. If you are making something else that uses dough, you can use any leftover dough to make “mini” poptarts.
