Homemade Tomato Soup

Ingredients

  • 1 can (28-ounce) whole tomatoes, in juice
  • 1 rib celery (roughly chopped)
  • 1 cup chicken broth (low-sodium)
  • Freshly ground black pepper and Kosher salt
  • 1 tablespoon pure maple syrup
  • 1-2 teaspoons fresh lemon juice
  • 1/4 to 1/3 cup cream

  • Saucepan or microwave-safe bowl
  • Spoon

This fantastic Homemade Tomato Soup recipe takes only 10 minutes to make – REALLY! This soup is so easy to make and has very little clean-up afterward. It’s perfect for a rainy autumn day or a cold winter day. Combine it with a grilled cheese sandwich to make a fulfilling meal.

Step by Step Instructions

Start by puréeing the celery, tomatoes and the broth in a food processor or blender. Blend until smooth.

Using salt and pepper, season it to taste. Then use the maple syrup and lemon juice to further season.

Stir in the cream.

Heat the soup. Put the soup in a microwave-safe bowl and microwave on high until thoroughly warmed. Alternatively, heat the soup in a pot.

Notes

Put the heated soup into an air-tight thermos to pack in a lunch for school. Pack in a lunch sack and send off to school. Toss some crackers into a bag so your pre-schooler can add them to the soup at lunchtime.
