Vegetable Bolognaise

Ingredients

  • 1 tablespoon olive oil
  • 1 small onion (finely chopped)
  • 1 small leek (thinly sliced)
  • 1/2 stick celery (diced)
  • 1/4 small bell pepper (diced)
  • 1 small carrot (peeled and grated)
  • 1/2 apple (peeled and grated)
  • 1 clove garlic (crushed)
  • 1 tin chopped tomatoes (400g)
  • 1 lb ground beef
  • 4 tbsp tomato purée
  • 2 tablespoon ketchup
  • 1 cup water (or salt-free stock)
  • 1/4 teaspoon dried oregano

This Vegetable Bolognaise recipe is a great dish to make your little one – especially if he or she won’t eat vegetables. This dish hides the healthy veggies quite well. By adding the apple, it adds a sweetness that most children enjoy. And even though this might look like a complicated dish, it only takes about 15 minutes to prepare!

Step by Step Instructions

Start by heating the oil in a large frying pan.

Sauté the apple, and the garlic until soft, about 10 minutes.

Carefully transfer to the blender and proceed to add the tomatoes, then blend until smooth.

Wipe the pan with a piece of paper towel, then add the ground beef and fry over a medium-high heat.

Break up the ground beef with a wooden spoon, until browned (this may need to be done in two batches). If your child likes a smoother texture, transfer the browned ground beef to a food processor and blend until smooth.

Add in the tomato and vegetable sauce to the browned ground beef and stir in the ketchup, water (or salt-free stock), tomato purée, plus oregano.

Bring everything to a simmer and cook until the sauce is thick, about 40 to 45 minutes.

If cooking for the whole family, use pepper and salt to season the adult portions.

Notes

You can serve this dish with rice, spaghetti or another pasta, especially if making this for the whole family. This Vegetable Bolognaise is suitable for freezing for your little one.
