Tomato, sweet potato and cheese sauce with pasta

Ingredients

  • 1 tbsp olive oil
  • 1 onion (chopped)
  • 1 clove garlic (crushed)
  • 2 cups sweet potatoes (peeled and chopped)
  • 2 medium carrots (peeled and sliced)
  • 1 14oz can crushed tomatoes
  • 1 cup boiling vegetable stock or water
  • 1/2 cup shredded Cheddar cheese (or any other cheese)

Tomato, sweet potato and cheese sauce with pasta is a delicious meal filled with nutrition. The sauce is enriched with veggies and is somewhat thick. You can use the sauce for the pasta, as this recipe calls for but it is also perfect for blending with other vegetables, chicken or fish.

Step by Step Instructions

Start by heating oil in the saucepan and saute the onion until softened (about four minutes).

Next, add the garlic and saute for another minute.

Stir in the carrots and sweet potato, pour in the boiling stock (or water) and then tomatoes.

Bring the saucepan to a boil, stirring regularly.

Cover the saucepan and simmer about thirty minutes until the veggies are tender.

Allow the contents to cool slightly and then blend the sauce to a puree consistency. Stir in cheese until melted.

Cook pasta separately according to the directions.

Drain  the cooked pasta and mix with the warm sauce.

Notes

For little fingers and mouths, use mini pasta shells for this recipe. For every two heaped tablespoons, use about one portion of sauce.
