Baby Cereal Pancakes

Ingredients

  • 1 cup whole wheat flour or 1 1/2 cup of all-purpose flour
  • 1/2 cup uncooked baby barley or rice baby cereal from the box
  • 1/2 cup uncooked baby oatmeal cereal
  • 1 cup formula, milk or another kind of liquid
  • 1/2 cup mashed banana or any other fruit of your choice
  • 1 tbsp melted butter or margarine (unsalted)
  • 3 egg yolks
  • apple juice or water (about 1/2 cup)

Utensils

  • Medium-sized bowl
  • Whisk
  • Frying pan or griddle

Baby cereal pancakes are a great way to get your baby or toddler to get some extra nutrients easily. You can also prevent any early morning battles because they will want to  eat them for breakfast as they are so tasty! You can try different variations by using different cereals and different kinds of fruit, depending on your baby’s preferences.

Step by Step Instructions

In a medium-sized bowl, mix all of the ingredients together. Add just enough juice to make the batter a pancake consistency. Add nutmeg, a dash of vanilla, cinnamon or another flavoring if you choose. Do not over-mix.

Add a touch of butter or olive oil to a hot frying pan and let it melt.

Pour batter into circles in the frying pan and flip when ready.

Once cooked, take from frying pan immediately.

Let cool and serve!

* You can also use a griddle instead of frying pan. A griddle will allow you more control over the temperature plus keep the temperature at a more consistent heat.

Notes

These baby cereal pancakes freeze well in a plastic freezer bag. This recipe is a great way to use up any leftover baby cereal that you have lying around.
